These beans come from Hacienda Betulia, in the northwestern province of Antioquia in Colombia. traditionally a traditional cocoa growing region. The criollo Betulia was created by grafting old local Colombian cocoa trees. At the Hacienda, 3 trees were selected that produced completely “white” cocoa beans and a nice cocoa flavor but also the complex fruit notes. These trees are numbered B6, B8 and the B9. They all have different flavor profiles and after years of grafting these parent trees, a ton of the 3 varieties are available for the commercial market.


One of the owners I met at a fermentation course in Brussels in 2018. Here I got to taste some samples of his cocoa beans for the first time. The B9 appeals most to me as a chocolate maker because of its insanely fruity character. The color of the chocolate is deceiving and looks more like a light milk chocolate.


Taste Profile: A complex chocolate with lots of exotic fruit, nice cocoa flavor, notes of spice and pine.


Ingredients: Cocoa beans and unrefined cane sugar.

Our chocolate is Vegan, soy and gluten free. May contain traces of lactose and is made in a factory that does not process peanuts and tree nuts.
